Caol Ila Distillery
Caol Ila Distillery, established in 1846, takes its name from the Gaelic term for "Sound of Islay." Just 11 years after its founding, the distillery changed ownership, and the new proprietors constructed a pier, significantly improving sea access.
By the late 19th century, Caol Ila was producing over half a million liters of alcohol annually. In 1927, the distillery was acquired by Distillers Company Limited (DCL), now known as Diageo, under whose ownership it remains to this day.
In the early 1970s, the distillery underwent a significant expansion, tripling its production capacity and becoming Islay’s largest whisky producer. During the challenging 1980s, Caol Ila began producing an unpeated spirit that gained popularity among blenders. This unpeated style continues to be produced annually to meet demand in the blended whisky market. In 2011, the distillery expanded further, increasing its annual production capacity to 6.5 million liters.
The distinct floral, grassy, and maritime character of Caol Ila's whisky is achieved through a 55-hour fermentation process. Additionally, the distillery's tall stills help reduce the presence of heavy phenols in the final product, refining the whisky's flavor profile.
