Lindores Abbey, founded in the late 12th century by the Earl of Huntingdon near Newburgh, Fife, was a daughter house of Kelso Abbey and once hosted royalty. Though now a ruin, it holds a key place in Scotch whisky history: the 1494 Exchequer Rolls record Friar John Cor, likely of Lindores, producing ‘aqua vitae’—earning the Abbey its title as the ‘spiritual home of Scotch whisky.’

In 2013, Drew Mackenzie Smith, the great-grandson of a farmer who bought the Abbey in 1912, launched a £10 million project to build a distillery. Archaeological discoveries delayed construction until 2016, and the site, including a visitor center, opened in 2017. Despite historical significance, the distillery avoids producing a chocolate liqueur to sidestep trademark conflicts with Lindt, maker of Lindor chocolates.
