2012 Daftmill, Summer Batch Release, Bottled 2025 (46%)
The barley variety Concerto was cultivated in the South Fields and harvested over two days, on 2 and 3 September 2011. Following harvest, the grain was carefully dried and stored on the farm before being transported to Alloa in the spring of 2012 for malting.
For this release, twenty-three first-fill barrels—each having previously matured bourbon—were selected. These casks were laid down on the upper level of the distillery’s traditional dunnage warehouse, where warmer conditions encouraged a more active maturation. The spirit was filled into casks between July and August 2012 and allowed to mature for nearly thirteen years before being bottled in June 2025.
Daftmill Distillery
The Cuthbert brothers, longstanding stewards of the land, have cultivated malting barley on their estate for generations. Today, a small portion of their barley harvest—approximately 100 tons—is set aside specifically for their distilling operations. Water for the distillation process is sourced from the estate’s own artesian well, and the draft, a by product of mashing, is sustainably repurposed as feed for their award-winning beef cattle.
